Bowl of lemon pasta with herbs and parmesan

Weeknight · Pasta

Twenty-minute lemon pasta, the one I make when nothing is defrosted

Six ingredients, one pan, and a pile of parmesan. This is the recipe I text to friends at 5:40 on a Tuesday when dinner needs to exist by six.

Cooked recently

Everything here has been made at least three times in my own kitchen, with the notes I wish I'd had the first go.

Golden roast chicken in a cast-iron pan

Sunday · Roast

Cast-iron chicken with shallots

One bird, forty minutes of hands-off oven time, and shallots that cook in the fat underneath. The default Sunday dinner.

45 min · Serves 4–6

Bowl of miso mushroom ramen with soft egg

Weeknight · Soup

Miso mushroom ramen

A broth built on mushrooms and white miso — no stock, no hours. Soft egg optional but strongly encouraged.

30 min · Serves 2

Bright vegetable grain bowl with greens

Lunch · Vegetarian

The everything grain bowl

A template, not a recipe: a grain, a green, something roasted, something briny, and a lemony dressing.

25 min · Serves 2

Rustic tomato galette with herbs

Lunch · Baking

Tomato galette, late summer

Salty cheese base, sliced tomatoes, torn basil. The free-form crust means nobody has to own a tart pan.

1 hr 10 min · Serves 6

Bowl of tomato soup with olive oil drizzle

Lunch · Soup

Roasted tomato soup

Tomatoes roasted until jammy, blitzed with stale bread. Cheap in October, better with a grilled cheese beside it.

55 min · Serves 4

Seared salmon fillet with herbs on a plate

Weeknight · Fish

Crisp-skin salmon, no fuss

Dry skin, hot pan, nine minutes, done. The hardest part is resisting the urge to move it around.

The bake list

Long, slow recipes for days with nowhere to be. Each one has a make-ahead note, because most baking is better when the batter rests overnight — you just have to know that going in.

  • Brown butter chocolate chip cookies Chill the dough 24 hours. Non-negotiable.
  • Buttermilk pancakes Mix the night before; cook on a low griddle.
  • Olive oil cake with citrus Keeps four days, wrapped, on the counter.
  • Everyday sourdough loaf The starter schedule that fits a work week.

Hands preparing food in a home kitchen

About

Hi, I'm Jill.

I cook out of a small kitchen with a temperamental oven and a window above the sink. I started writing these recipes down in 2019 because I kept re-deriving the same lemon pasta from memory, badly.

Everything here is cooked in normal equipment, with ingredients you can find at a regular grocery store. When a recipe needs a special pan or a four-hour rise, I say so at the top.
